RECIPE: Delicious Pear and Banana Muffins

Delicious Pear and Banana Muffins

(High in fibre, low in fat and sodium) 
Makes 12

Ingredients

·        1 ½ tablespoons oil

·        1 cup wholemeal self-raising flour

·        1 teaspoon baking powder

·        ½ teaspoon all spice

·        ½ teaspoon nutmeg

·        ½ teaspoon cinnamon

·        1 egg

·        2 pears cooked, pureed

·        2 over ripe bananas, mashed

·        ¼ cup rolled oats

Instructions

1.      Pre-heat oven to 180˚C.

2.      Line a 12 hole muffin tin with muffin cases.

3.      In a bowl sift flour, baking powder and spices.

4.      In a second bowl, whisk the egg and oil and stir into dry ingredients using a wooden spoon.

5.      Mix in the pear puree, mashed banana and rolled oats.

6.      Spoon the mixture into muffin cases and bake for 20 minutes or until cooked through.

7.      Cool on a wire rack.
