Delicious Pear and Banana Muffins by (Jessica Honeywood, Dietitian) (High in fibre, low in fat and sodium) Makes 12 Ingredients · 1 ½ tablespoons oil · 1 cup wholemeal self-raising flour · 1 teaspoon baking powder · ½ teaspoon all spice · ½ teaspoon nutmeg · ½ teaspoon cinnamon · 1 egg · 2 pears cooked, pureed · 2 over ripe bananas, mashed · ¼ cup rolled oats Instructions 1. Pre-heat oven to 180˚C. 2. Line a 12 hole muffin tin with muffin cases. 3. In a bowl sift flour, baking powder and spices. 4. In a second bowl, whisk the egg and oil and stir into dry ingredients using a wooden spoon. 5. Mix in the pear puree, mashed banana and rolled oats. 6.
